As the weather has been getting warmer and Summer is just behind the corner, I’ve been feeling happy and excited for the season of celebrations and Spring (also as an April child, this season has always felt special). In this Merenda I share with you two of my recent favorite Italian sparkling wines and some delicious, yet super simple antipasti dishes to pair with them. Salute!

Ferrari Brut Trentodoc with Anchovies, butter and toast

The classic Ferrari Brut to uplift any occasion

The winery Ferrari Trento was founded in 1902 by Giulio Ferrari from Trentino-Alto Adige. Signor Ferrari wanted to create an Italian sparkling wine to compete with Champagne. With passion and hard work, Ferrari succeeded in his mission, and over 100 years later Ferrari Trento produces award-winning and excellent sparkling wines. Now owned and run by the Lunelli family, Ferrari Trento continues to fulfil the dream of its founding father.

Such as the Franciacorta sparkling wines, also the Ferrari Trento sparkling wines are made with the metodo classico, also known as the traditional method or Champagne method. Part of the winery’s classic line, Ferrari Brut is an elegant sparkling wine, with high acidity, made with 100% Chardonnay. In fact, Trentino is the largest area where Chardonnay is grown - thanks to Giulio Ferrari.

Trentino offers optimal terroir for viticulture. The higher altitude and the alteration of warm days and cool nights, creates an ideal area for the production of sparkling wines.

The Ferrari Brut was first made in 1902. On the nose it’s fresh, intense with ripe green apples, and a delicate undertone of yeast. The palate is harmonious and nicely balanced with hints of ripe fruit and crusty bread. In fact, this makes it a great pair with the classic coastal combination of: toast, butter and anchovies.

When the two classics come together
Serve Ferrari Brut with the three ingredient super simple antipasto.

Toast, butter & anchovies

What you’ll need:
- Slices of toasted wheat or sourdough bread
- A few cubes of butter
- Anchovies
- A squeeze of lemon and some zest of a lemon zest
On a plate assemble the slices of toast, cubes of butter and anchovies. Top with a squeeze of lemon and its zest. You can make individual plates with the three main ingredients ready assembled, or let each individual assemble their own plate. In this case, leave the a few slices of lemon to the side.
Tip!
If you want, you can also add a piece of Burrata or Mozzarella di Bufala to the plate. This would make the dish a bit heavier. Check this previous Merenda post where you can see the classic combination served at coastal restaurants in Forte dei Marmi.
